Ube is a type of purple yam native to Southeast Asia. It’s a prized ingredient in filipino cuisine, used in both traditional desserts and modern desserts.
After we tried this of course we had to try incorporating it into our chocolate. With the initial try adding it to white chocolate and making an ube chocolate block. We loved the flavour. It was absolutely delicious and the natural purple colour look’s stunning.
Coincidently halloween was around the corner and what better than to use the purple coloured chocolate to make a halloween pie?
We ended up going with mango because it really compliments the ube flavour and is another one of those fruits with natural stunning orange/yellow colour. So now we have a halloween pie that is orange/yellow and purple. As well as deliciously sweet and fruity.
With the main two elements established our chocolate team went ahead and made samples! Adding a layer of biscuit to the bottom some mango ganache and mango filling and topping it off with the delicious ube chocolate.
After taste testing and seeing the finished project with the little spider on top as the finishing touch it was a go ahead!
